Since the Eighteenth Century, the French have been the dominant force in setting the standards for fine wine in the western world. The vinifera grapes that took root and identity in specialized geographical locations in France absorbed the local culture and evolved with the cuisine creating a tradition of wine that is still, debatably, the finest in the world. These vinifera -- pinot noir, pinot gris, cabernet franc, chenin blanc, etc. continue to enchant wine lovers the world over. Bistro Corlise has a genuine passion for exploring the local cultures of France -- their foods, and especially their wines.
In the back of the wine list we have assembled brief descriptions of these locales to illuminate the unique impact of the regional culture on the wines of the old world that we represent. Because everyone's palate is different, we have bypassed identifying the wines with flavor profile descriptors and instead have written broad descriptions to, in effect, create a place for you "at the table" of your own dialogue with these wonderful wines.
